An easy to put together weekday dinner for the busy someone. If you like fish and have some leftover rice this dish is easy to prepare and tastes delicious. The only time it takes is to bake. All the juices from veggies as they bake make the rice so flavorful. Many simple variations to this recipe that you can play around with are mentioned in the tips below.
Baked Fish Meal recipe:
Makes: 2 servings / Oven temperature: 425 F / Baking Time: 30-35 mins
You will need:
Cooked Rice - 1 cup
Tilapia - 1 Fillet, cut into 4 pieces
Zucchini - 1, chopped
Onion - 1/4, chopped
Tomato - 1, chopped
Garlic - 2 cloves
Jalapeno or Serrano - 1 (optional)
Dried or fresh Basil
Step 1: Prepare the fish by marinating with salt, olive oil, basil and grated garlic.
Step 2: Place chopped zucchini, tomatoes, onions and green chili in a bowl. Mix in some olive oil, salt and basil.
Step 3: In a shallow baking dish spread out the rice in a thin layer. Top it with ¾ of the vegetable mixture and then place the fish. Spread the leftover ¼ of the vegetables on top trying not to cover the fish entirely otherwise it will not cook properly.
Step 4: Place in a preheated 425 F oven and cook for 30-35 mins. Serve and enjoy!
- Basil can be replaced with thyme, rosemary, cilantro, caribbean spices, indian spices or any spices of your choice.
- Add carrots or any other vegetable in addition to zucchini for extra flavor.
