Barbecue Zucchini Burger Recipe:
Makes: 4 burgers
You will need:
Black/Kidney beans - 1 cup
Zucchini - 1 finely chopped
Onion - 1/2 cup finely chopped
Garlic - 2 cloves finely chopped
Red bell pepper - 1/4 cup finely chopped
Cumin powder - 1/2 teaspoon
Paprika - 1 teaspoon (optional)
Black pepper - 1/2 teaspoon
Corn starch - 2 tablespoons
Olive oil - 2 tablespoons
Salt - as per taste
Burger buns - 4
BBQ sauce - 1-2 tablespoons (Devil's Spit)
Onion, tomatoes and cilantro - For topping
Step 1: Soak beans for at least 4 hours and cook them until they are very soft. Mash and set the beans aside.
Step 2: Heat a pan with some olive oil. Add the chopped zucchini, onion, garlic and red bell pepper. Cook on medium high heat. The goal is to sweat out moisture from the veggies as much as possible.
Step 3: Combine the cooked veggies with the mashed beans. Add the spices, corn starch and salt and mix well. Form patties and set aside.
Step 4: Heat up a grilling pan with some olive oil. Grill the zucchini patties on both sides until a crispy layer forms.
Assemble the burgers
Step 5: Toast the buns if you prefer. Place a patty on the bun and top it with thinly sliced onion, tomato and some cilantro. Drizzle the barbecue sauce as much as you like and enjoy.
- If you cannot handle spice use any mild bbq sauce you like.
- Top with some cheese if you prefer.
- Use any greens as topping.
