Roasted Potato with Kale recipe:
Makes: 2-3 servings
You will need:
Potatoes - 7 medium sized
Baby Kale - 3 cups packed
Ginger and garlic - 1 tablespoon paste or minced
Curry powder - 1 teaspoon
Paprika - 1/2 teaspoon (optional)
Oil - 2 tablespoon
Salt - as per taste
Step 1: Cut potatoes into bite sized pieces leaving the skin on, cover with a damp paper towel and microwave for 5 mins.
Step 2: Heat up a pan with oil. Add the cooked potatoes to the pan along with ginger, garlic, curry powder and paprika. Stir fry until the potatoes are crispy on the outside, which takes about 15 mins.
Step 3: Sprinkle some salt, add the kale and cook for another couple of minutes.
