Baked Fish Meal recipe:
Makes: 2 servings / Oven temperature: 425 F / Baking Time: 30-35 mins
You will need:
Cooked Rice - 1 cup
Tilapia - 1 Fillet
Zucchini - 1/2 cup chopped
Onion - 1/2 cup chopped
Tomato - 1/2 cup chopped
Carrots - 1/2 cup chopped
Garlic - 3 cloves
Jalapeno or Serrano - 1 thinly sliced (optional)
Dried or fresh Basil - 1-2 teaspoons
Salt - as per taste
Olive Oil - 1 tablespoon
Step 1: Prepare the fish by marinating with salt, olive oil, basil and grated garlic.
Step 2: Place chopped zucchini, carrots, tomatoes, onions and green chili in a bowl. Mix in olive oil, salt and basil.
Step 3: In a shallow baking dish make a bed of rice. Spread out mixed vegetables on top of the rice. Place the marinated fish pieces on top of veggies.
Step 4: Bake in a preheated 425 F oven for 30-35 mins. Serve and enjoy!
- Basil can be replaced with thyme, rosemary, cilantro, Caribbean spices, Indian spices or any spices or herbs of your choice.
- You could use also use bell peppers, green beans, or any other veggies you like.
