Chicken Meatball & Coconut Cream Pasta Recipe:
Makes: 2 servings
You will need:
Penne pasta - 1 1/2 cups
Chicken meatballs - 5 cut into pieces
Coconut milk - 1/2 can
Onions - 1/2 cup
Red bell pepper - 1/2 cup
Garlic - 3 cloves
Jalapeno - 1
Curry powder - 1 teaspoon
Fresh Basil - 2 tablespoons
Salt - as per taste
Olive oil - 1 table spoon
Step 1: Cook pasta as per package instructions.
Step 2: Heat up a wide pan with olive oil. Add the chopped onions, bell pepper, garlic and jalapeño. Cook for 5 mins.
Step 3: Add the chopped meatballs, curry powder and salt. Stir fry for couple of minutes then add the coconut milk. Let cook till the sauce has thickened to desired consistency.
Step 4: Add cooked pasta and chopped basil. Mix well till the pasta is well coated with sauce.
Step 5: Garnish with some more fresh basil and serve.
